Pesto Pasta with Chicken

Since now we have our homemade pesto... we decided to mix it up with pasta and chicken. Here's a recipe I found in the internet. http://allrecipes.com//Recipe/penne-with-chicken-and-pesto/Detail.aspx Ingredients 1 (16 ounce) package penne pasta 2 tablespoons butter 2 tablespoons olive oil 4 skinless, boneless chicken breast halves - cut into thin strips 2 cloves garlic, minced salt and pepper to taste 1 1/4 cups heavy cream 1/4 cup pesto 3 tablespoons grated Parmesan cheese Directions Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Cut the chicken into strips. Season with salt and pepper. Heat butter and olive oil in a large skillet over medium heat.   Saute chicken and garlic until chicken is almost cooked. Reduce heat and stir in salt, pepper, cream, pesto and Parmesan cheese. Cook until chicken is no longer pink inside. Stir in cooked pasta. Serve with a smile! :

Homemade Pesto Sauce

Bursting with fresh-from-the-garden color and flavor, a drizzle of homemade pesto brings simple dishes to life.  Indeed, pesto is pasta's perfect partner. So how to make your own pesto sauce? Here's how: Ingredients 2 cups fresh basil leaves, packed We actually bought the fresh basil leaves in Salcedo Market for only 25 pesos! 1/2 cup freshly grated Parmesan-Reggiano or Romano cheese 1/2 cup extra virgin olive oil 1/3 cup pine nuts or walnuts or plain cashew nuts 3 medium sized garlic cloves, minced Salt and freshly ground black pepper to taste Mix everything in a food processor or blender. Ta-daa! Now you have your very own home made pesto sauce. Serve with pasta, or over baked potatoes, or spread over toasted baguette slices. One tip I got from the internet: If you want to freeze the pesto sauce, omit the cheese because it does not freeze well. Line an ice cube tray with plastic wrap, and fill each pocket with the pesto. A Trip to Salcedo Market

I have heard a lot of good things about the Salcedo Market. It was only last April 9 that we had the chance to visit and see what Salcedo Market offers... From my research in the internet, Salcedo Market started in 2004 with a few stalls but later on grew to become an exciting destination for budding cosmopolitan culinary adventurers. It is located in the confines of Jaime C. Velasquez Park sandwiched between the streets of Leviste and Tordesillas in Salcedo Village, Makati City. It is open only on Saturdays from 7 am to 2 PM. We heard that there is a similar market opened in Legaspi Village every Sunday.  Anyway, it’s a nice place for anyone interested in food. If you like cooking things, there are a variety of fresh produce available and almost all the produce are organic. Forever 21: Now open in SM Makati

Everyone is raving about Forever 21.... except me. When I first heard that Forever 21 will open in SM Megamall, I was not one of those people who panicked and rushed to the store. I thought, isn't that the same store that closed in Festival Mall... specifically located in the ground floor?! Hmmm... I actually did not like that store so I find it weird why people are making a big fuss on the new Forever 21 store in Megamall.... And since I live in the South, I did not bother to go to SM Megamall just for that store. Finally after 7 months since the opening of Forever 21, I was able to go there... it was like heaven... they have huge variety of clothes, shoes, accessories, bags, belts etc.... and guess what... their price isn't that expensive.. I got a plain tee for less than 200 pesos and shades for less than 500 pesos! Not bad huh?! Though it's shameful to admit but yes, I am now one of those crazy people that raves about Forever 21. 3 months down.... 9 months to go for 2011 Here's part 10 of Project 365... happy browsing! Day 91 April 2 Today is my first driving lesson for the year... whew! My first attempt in driving is 12 years ago... hehehe :) Day 92 April 3 Shakey's Sunday with my family... :) Day 93 April 4 Wellness celebration day! We had the awarding of the quarterly live well challenge winners and special wellness award winners. Though I was not one of the winners, I had fun because after the awarding, we had free healthy snacks! Day 94 April 5 Fire and Earthquake Orientation which was facilitated by F01 Larry Calingasan of Binan Fire Department. Some of my officemates had the actual training on using fire extinguishers.... Scary! Day 95 April 6 MS Access Training Session 1. It was a very educational, interesting and fun 'classroom-type' of training. I just hope I can apply my learnings in the future... Cream Cheese Penne

Actually, we just got this recipe from the back of the cream cheese wrapper... but this became Gerard's signature pasta... :) Ingredients: 300 g penne pasta 1 bar magnolia cream cheese (225gm., softened) 3 tbsp cooking oil 3 tbsp garlic, minced 1 cup red and green bell pepper, chopped 1 cup canned button mushroom, drained and sliced 1/4 cup black olives, drained and sliced 1/4 cup white wine 2 cans crushed tomatoes 1 1/2 tbsp salt 1 1/2 tsp ground pepper 1/tsp oregano 1 tsp dried basil 1 cup cheddar cheese, grated Procedure: Cook penne pasta according to package directions. Drain and set aside. In a pan, add oil and saute garlic over medium heat. Add the bell peppers, mushrooms and olives. Pour in wine and let simmer for 5 minutes. Add the crushed tomatoes and cream cheese. Stir until well blended and the cheese has completely melted. Season with salt, pepper and oregano. Simmer for 5 minutes.
